Dried river creature, anyone?

On the bus from Mt. Kyaiktiyo to Bago. The river was lined with racks and racks of this mysterious river creature, left to dry in the sun. The racks were backed by stalls lining the roadside selling this... local delicacy. I still have no idea what this animal is. Any guesses??
